Pie Machine Pastry Dough Recipe with Lard

Pie Machine Pastry Recipe
1 pound            lard  
1 3/4 pound     all purpose flour (5 cups)
2 teaspoons      salt
3 teaspoons      sugar
3/4 - 1 cup        very cold water
Mix flour, salt and sugar into large mixing bowl.  Cut in lard or
shortening with pastry blender or fork.
Slowly add cold water, mixing gently until the dry mixture
forms a ball.  Do not over mix!  It is better not to incorporate
the last bit of flour mixture than to over mix your pastry.  
Press out using your Birds Hill pie and tart presses or Pie Machine.  Or  
roll out with a rolling pin.
