1 pound lard |

1 3/4 pound all purpose flour (5 cups) |
2 teaspoons salt |
3 teaspoons sugar |
3/4 - 1 cup very cold water |
Mix flour, salt and sugar into large mixing bowl. Cut in lard or |
shortening with pastry blender or fork. |
Slowly add cold water, mixing gently until the dry mixture |
forms a ball. Do not over mix! It is better not to incorporate |
the last bit of flour mixture than to over mix your pastry. |

Press out using your Birds Hill pie and tart presses or Pie Machine. Or |
|
roll out with a rolling pin. |
