Fried Pie Recipe #2
Pastry: 3 cups all purpose flour 1 teaspoon salt 2 teaspoons baking powder 2 teaspoons sugar 3/4 cup lard or shortening (we prefer lard) 3/4 cup milk Filling: 3 cups dried fruit (apples, apricots, peaches or prunes) 1 1/2 cups water 6 tablespoons sugar 1/4 teaspoon cinnamon 1/4 teaspoon allspice Method: Mix together flour, baking powder, sugar and salt. Cut in the lard/shortening with a pastry blender or fork, until mixture resembles coarse crumbs. Sprinkle milk over flour mixture mixing lightly with hands until dough comes together in a ball do not over work the dough. Filling: Cook the dried fruit in the water simmering over low heat for about 30 minutes, until very soft. Cool and mash fruit slightly. Stir in sugar and spices. To Assemble - divide the dough into 12 balls. Roll out or shape with Birds Hill Fried Pie Machine into 5" circles. Place 2 tablespoons filling onto one side of the dough. Using water, wet the dough edge slightly. Fold dough over filling making a half moon. Crimp with fork to seal well or crimp with your Birds Hill Fried Pie Machine following instructions. Deep Fry in hot oil at 375 for 3-4 minutes until golden brown. Sprinkle with icing sugar or glaze mixture of icing sugar and water. Customer Dave Sargent of Sargent Farms recommends frying in peanut oil or soy bean oil. These oils don't seem to penetrate the dough. |
