Fried Pie Dough and Filling Recipe #1

 Tip:

Dave Sargent of Sargent Farms recommends frying your fried pies in peanut oil or soy bean oil.  These oils don't seem to penetrate the dough, making your pies less greasy.

Pastry:
3 cups all purpose flour
1 teaspoon salt
5 ounces lard or shortening
1 egg, beaten lightly
1/4 cup very cold water
1 teaspoon vinegar
Filling:
3 cups dried fruit (apples, apricots, peaches or prunes)
1 1/2 cups water
6 tablespoons sugar
1/4 teaspoon Cinnamon
1/4 teaspoon Allspice
Method:
Mix together flour and salt.  Cut in the
lard/shortening with a pastry blender,
or fork, until mixture resembles coarse
crumbs.  Mix egg, water and vinegar
together.  Sprinkle over flour mixture,
mixing lightly with hands until dough
comes together in a ball. 
Do not over work the dough.
Filling: Cook the dried fruit in the water
simmering over low heat for about 30
minutes, until very soft.  Cool and mash
fruit slightly.  Stir in sugar and spices.
Assembly:  Divide the dough into 12
balls.  Roll out or shape with the Fried
Pie Press into 5" circles.  Place 2 table-
spoons filling onto one side of the
dough. Using water, wet the dough
edge slightly. Fold dough over filling making a
half moon. Crimp with a fork to seal well.
Deep Fry in hot oil 375 degrees  3 to 4 minutes until
golden brown. Sprinkle with icing sugar or glaze with
icing sugar mixed with a little water.
