  Gluten Free Empanada  Dough Recipe

works great in the Fried Pie/Empanada Machine
1/4 cup tapioca flour
1/4 cup sweet rice flour or glutinous rice flour
1/3 cup cornstarch
1/3 cup chickpea flour  
1 Tbsp. guar gum or xanthum gum
1 Tbsp. potato starch
1/2 teaspoon salt
3 eggs
1 Tbsp. oil
 
Method:
Mix dry ingredients into a medium sized bowl.
In a measuring cup mix together the 3 eggs and 1 tablespoon oil with a fork.
Stir egg mixture into flour mixture with fork until it begins to hold together.
Work dough with your hands 1 - 2 minutes until it holds together and is  
smooth.  This is a firm dough.  
This dough forms really well in the Birds Hill Fried Pie/Empanada Machine.  
Otherwise roll into a 5 inch circle.  Put 1 tablespoon filling on one half of  
circle.  Fold and crimp well.  Place on oiled baking sheet.  Brush tops of  
empanadas with peanut or other oil.
Bake at 400 F for 12-15 minutes until light brown.
