Oatmeal/Chocolate Chip Cookies |
| 1 cup margarine |
|
| 1 cup white sugar |
| 1 cup brown sugar |
| 2 eggs |
|
| 1 teaspoon vanilla extract |
|
| 1 teaspoon guar gum |
|
| 1 cup rice flour |
|
| 1/2 cup cornstarch |
|
| 1/2 cup potato starch |
|
| 1 teaspoon baking soda |
|
| 1/2 teaspoon baking powder |
|
| 1/2 teaspoon salt |
|
| 1 cup chocolate chips |
|
| 2 cups Buckwheat Flakes or Quinoa Flakes |
|
| Cream together margarine, sugars, egg,
and vanilla. Sift together the flours, |
| baking soda, baking powder, guar gum
and salt. Mix into the creamed |
|
| mixture. Stir in the Buckwheat or
Quinoa Flakes and chocolate chips. |
|
| Drop by rounded tablespoon onto greased
cookie sheet. Flatten slightly |
|
| with a fork. Bake at 350 for about
10 minutes, until light brown. |
